With school back in session, it’s time to back to regular family dinners. During the summer we are way lax about sitting down for dinner and eat a lot of cereal, hot dogs and quesadillas. I try to be a little more ambitious about healthy dinners and eating together during the school year. I find we always do so much better when we take that forty-five minutes, sit down together and chat about our day. The only problem is that meal planning is tricky. My girls are PICKY! It’s so hard to find things that both of them like. And healthy food…forget about it. They would eat cereal all day, everyday if they could. So I’ve been trying super hard to make small changes that improve their diet. Like adding protein to things they already love. I’ve been experimenting on a few new recipes the last few days and thought I would share some of the success stories, including these mini taco bites. Both my girls loved these and I was happy to get some protein in their bellies.
